Brewing Section

In cooperation with the well-known German company Huppmann Handel Gmbh, JSC ZAVKOM produces and delivers parts of complete brewing lines for breweries of any capacity.

Own development allows offering you complete brewing lines with a capacity of 0.5 tons of dry filling. Automatic control cabinets allow automatic adjustment of flow rate, temperature and pressure level in containers, percolator and heat exchanger jackets, to control mixing devices during mashing and filtering, to prevent and avoid emergency situations.

Yeast Section

Sterilizers-propagators and yeast generators, yeast storage tanks.

The yeast section includes two parts:

The first part serves to prepare a pure yeast culture (PYC) and is called the PYC section. It includes two vessels-propagators of different volumes. The volume is selected based on the required production capacity. From the laboratory or the "Carlsberg" flask, yeast is transported by sterile air through an aseptic sampling valve into the propagator of a smaller volume. The yeast aeration mode and the propagation temperature are automatically maintained. The process of yeast propagation lasts about a day and ends when the concentration of yeast is 80 ... 120 ml. cells per ml. During this time, wort is fed to the propagator of a larger volume through the aerator. Simultaneously with the supply of wort in the heating jacket, on the cone steam is fed. The wort is heated to 1000 ... 1050 °С and at this temperature it is hold for approximately 20 minutes with continuous circulation. After the heating of the cooling jacket on the cylindrical part, propylene glycol is fed to the larger propagator and the wort is cooled with continuous circulation. The propagators are connected on the panel by reversible cams. The pipeline is washed with water and sterilized by steam, after which the yeast from the small propagator is pumped to the large propagator. The yeast aeration mode and the propagation temperature are automatically maintained. The process of multiplying yeast in a large propagator lasts about a day and ends when the concentration of yeast is 80 ... 120 ml. cells per ml.

The second part serves for collection of barm from the fermentation section and is called the yeast storage section. After the fermentation process the barm is fed from the CCT section or fermentation section to the yeast storage section, where there is a vessel-propagator. If there are several vessels, then, as a rule, they are of the same volume. The quantity of vessels-propagators is selected based on the required production capacity. Further this yeast is mixed in the flow with sterile wort and is fed to the fermentation section.

The equipment manufactured for yeast section is characterized by high roughness indexes of the internal surface of Ra 0.4 μm, a high-performance coiled heat exchange jacket on the cylindrical part and the lower conical bottom of the tank, which provides dynamic movement of heat and coolant.

Fermentation Section

In the fermentation section there is a process of fermentation and after-fermentation, resulting in a beer. The fermentation process can occur in two ways:
1. A classic way, where there is a separate fermentation process (fermentation tanks) and after-fermentation (lager tanks). In this process, the fermentation section is called a fermentation and lager section.
2. Combined process of fermentation and after-fermentation in one tank, which is called a cylinder-conical tank (CCT). In this process, the fermentation section is called the CCT section.

A classic way, where there is a separate fermentation process (fermentation tanks) and after-fermentation (lager tanks).

Depending on the option of location of the tanks, dimensions and cooling system of the premises - they are available in vertical and horizontal versions, including internal coils or external cooling jackets, thermal insulation.

CCT Section

Designed for after-fermentation of beer. The wort mixed with yeast in the flow is fed to the tank, where firstly the wort ferments and then it finally ferments in one tank and ripens until it is ready. During the fermentation and after-fermentation process, a certain temperature is maintained with the help of external cooling jackets on the cylindrical part (there may be several zones) and the lower conical head. After fermentation and after-fermentation the beer is ready and can be sent to the bottling (unfiltered beer) or to the filtration section, and then to the bottling or to the beer storage section (bright beer tank section).

The obvious advantage of CCT over the classical scheme of separate fermentation in horizontal fermentation and lager tanks:
– reduction of occupied space per cubic meter of the produced product;
– economical and efficient washing;
– simplified yeast removal process;
– reduction of food losses;
– reduction of energy costs;
– simple automation;
– technological flexibility;
– intensification of the production has led to the almost universal replacement of classical fermentation and lager tanks by CCT.

Today JSC "ZAVKOM" is the only Russian manufacturer of the CCT and in tenders held by brewers it competes only with Western companies.

Bright Beer Tank Section

It is designed for intermediate storage of beer before bottling.

Bright beer tanks are designed for intermediate storage of beer before bottling. They are equipped with vacuum-safety and pipeline fittings, washing heads. Any required volume from 1 to 300 m3 of horizontal and vertical design, equipped with fittings, piping system, pumps, control system.
