Technology of production of Cognac

Classical technology of cognac production remained unchanged for over two centuries and includes a double distillation of cognac wine materials obtained on periodic type vessels with subsequent aging of alcohol (distillate) in oak barrels.

Process cycle of modern cognac production encompasses four stages:
• cooking of cognac wine materials;
• distillation of cognac wine materials into alcohol;
• cognac alcohol aging in contact with oak wood;
• cognac blending and processing.
